Homemade Roasted Pumpkin Seeds

Afterwards, we made two delicious homemade roasted pumpkin seed recipes. They were so delightful that I am going to share the recipe with you today! Enjoy!

Homemade Roasted Maryland Style Pumpkin Seeds

Why roast pumpkin seeds?

Carving pumpkins is a must-do fall activity, but what do you do with the extracted seeds?

We eat them, and boy, are they tasty! I am actually about to head out after I write this post to buy more pumpkins because we already finished all of our seeds.

Not only are they tasty, but they are full of antioxidants, healthy fats, magnesium, and zinc.[1]

For both of these recipes, I used raw pumpkin seeds from one large pumpkin. I split them in half, and it yielded around four cups of seeds. For each recipe, I used approximately two cups of pumpkin seeds. Enjoy =)

Two Homemade Roasted Pumpkin Seed Recipes
Homemade Pumpkin Seeds Recipe

Lime and Salt Roasted Pumpkin Seeds

Yield: 2 cups
Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

Ingredients

  • 2 cups of Pumpkin Seeds
  • 1 generous teaspoon of sea salt
  • 1 teaspoon of olive oil
  • 1 lime

Instructions

  1. Once you have extracted all of the seeds from your jack-o-lantern, place them in a colander in your sink and run water over them. Remove all of the pumpkin’s pulp from the seeds to ensure proper roasting. Using a slotted spoon half the seeds into two small bowls and let dry for about an hour.
  2. Preheat your oven to 375°. Line a baking sheet with foil. Since I cooked both recipes in the same batch, I made a foil divider to avoid dirtying too many dishes. Parchment paper would also work just fine.
  3. Place half of your pumpkin seeds (mine yielded four cups, so two cups) into a small bowl. Cut your lime in half. With a lime press, squeeze all of the juice out of the lime and onto your seeds. Then add your generous teaspoon of salt onto the pumpkin seeds. Mix with a spoon.
  4. Place onto one half of the baking sheet.
  5. Place one teaspoon of olive oil into a small serving bowl, and with a basting brush, apply oil onto your seeds. This will ensure your seeds get crispy. I brush the oil on after the lime so that the lime can absorb into the seed and not roll off of the oil.
  6. Place into the oven for about 30 minutes. Make sure to check your seeds halfway through to stir them up a bit, so they bake evenly. If, after 25 minutes, all of the lime juice has not evaporated, leave them for another 5-10 minutes. I prefer my lime & salt pumpkin seed crispy and almost burnt, so I leave them in for a bit longer.
  7. Take your seeds out and let them cool. There you have it a healthy fall snack that the whole family can enjoy!

  • 1 teaspoon of olive oil
  • 1 lime

Instructions

    4. Place the seeds onto one half of the baking sheet. Only use half if you are making more than one type of roasted pumpkin seed.
    5. Place pumpkin seeds into the oven for 30 minutes. Make sure to check your seeds halfway through to stir them up a bit, so they bake evenly.
    6. Take your seeds out and let them cool. There you have it a healthy fall snack that the whole family can enjoy!

I LOVE roasting pumpkins after our pumpkin carving expeditions. We always stick to the usual olive oil, salt, pepper and some Cayenne. I can't wait to give these a try! Especially the maryland one, I've never tried that!

This brings back memories! I haven't roasted pumpkin seeds since I was a kid, but this makes me want to. And the lime part was interesting, I'd never done that; we'll have to try it soon.
